{Homemade Granola} in a Jar


I am a HUGE fan of Granola!
I began making it myself when I was trying to lower my sugar intake.
 I found that the store bought granola was always
 WAY TOO SWEET for my tastes.   
I also like to vary the ingredients and try different combinations.

 This is my favorite Fall version. It has roasted Pumpkin Seeds which are also called Pepitas! I include another favorite nut...Pistachios!
Dried fruit is a staple in most granolas, 
so for this one I add dried tart cherries...yum!
Homemade Granola

2 3/4 cup oats (old fashioned)
1 c. coconut
1/2 c. flaxseed
1 c. pistachios
1/2 c. pepitas, roasted & salted pumpkin seeds
1 Tablespoon salt
1/2 c. brown sugar
1/3 c. maple syrup
1 teaspoon vanilla
1/3 c. coconut oil
3/4 c. dried tart cherries

Preheat oven to 300°. Mix together the oats, coconut, flaxseed and nuts in a large bowl. In a separate bowl, combine salt, brown sugar, syrup, vanilla and oil. Pour over oat mixture and stir until coated. Spread mixture out on a jellyroll pan and bake for 20-25 minutes, stirring halfway. Let cool and stir in the dried cherries. Keep stored in an airtight container.
I love to eat it just as is,
but you can pour milk over it, or mix it with yogurt and fresh fruit.

It also makes a great gift in a jar!
